Omek Houria: Spicy carrots salad
- 6 carrots
- 1 tbsp of Harissa
- pinch of salt
- 2 tbsp of tuna in oil
- (Some ground coriander) optional
- "Soleil de Carthage" olive oil
- Peel carrots and cut them into rings. Leave them to boil in salted water, for about 30 minutes, until they are tender. Drain them then mash them roughly with a fork.
- Season with some ground coriander (optional), add on the tuna, Harissa, 4 tbs of "Soleil de Carthage olive oil and stir. Everything has to be shiny. Decorate with hard boiled eggs and olives.
